How to Choose the Right Coolroom Size for Your Business

Getting the size of your coolroom wrong is one of the most common and costly mistakes businesses make when it comes to commercial refrigeration. Too small, and you are fighting a losing battle to keep temperatures stable. Too large, and you are paying to cool empty space every single day. At Robertson's Refrigeration, we have been helping businesses across Geelong and the surrounding region get this right since 1986, and the sizing conversation is always where we start.

Why Size Matters More Than People Think

A coolroom that is too small creates real problems. When stock is packed in tightly, airflow is restricted and the unit has to work harder to hold temperature. That means higher energy bills, more wear on the refrigeration system, and a genuine risk of perishables drifting outside safe temperature ranges during a busy service.

An oversized coolroom brings its own issues. Refrigeration systems are most efficient when running at or near capacity, so a unit cycling in a half-empty space wastes energy and ties up capital unnecessarily. Getting the size right from the start is far cheaper than retrofitting or replacing a coolroom that does not suit your operation.

Key Factors That Determine the Right Size

There is no universal formula, because every business runs differently. When we carry out a free on-site assessment, these are the factors we work through:

  • Stock volume and turnover. How much product do you need to hold at once, and how quickly does it move? High turnover businesses can often work with a smaller footprint than those holding large standing inventory.
  • Staff access. How many people need to be in the coolroom at the same time? A busy kitchen with multiple chefs pulling product all day needs clear space, not just cubic metres.
  • Peak versus quiet trading. Many businesses across Geelong and surrounds see significant seasonal swings. Your coolroom needs to handle peak demand, not just average demand.
  • Future growth. If you are planning to expand your menu, take on more catering work, or grow your wholesale operation, building in a little extra capacity now is far more cost-effective than adding a second unit later.
  • Available floor space. The coolroom has to fit your premises without disrupting workflow, which is where a custom-built solution often makes much more sense than an off-the-shelf option.

Common Coolroom Sizes and What They Suit

While every installation is different, these ranges give a useful starting point:

  • Small walk-in coolrooms (roughly 4--10 cubic metres) suit a small cafe, takeaway, or restaurant with modest storage needs and frequent deliveries.
  • Medium coolrooms (roughly 10--30 cubic metres) work well for a busy pub, butcher shop, or mid-sized restaurant with enough room for organised racking and easy staff movement.
  • Large coolrooms (30 cubic metres and above) are suited to supermarkets, large-scale caterers, food manufacturers, and wholesale distributors. At this scale, layout and airflow design become especially important for consistent temperatures throughout the space.

These are starting-point guides. The right size always depends on how your specific business operates.

Why Custom-Built Is Often the Better Choice

Off-the-shelf coolrooms come with one key limitation: you adapt your space to fit the product. That can mean wasted floor space, awkward corners, or a footprint that does not suit your workflow.

When we build a custom coolroom, we design it to fit your space precisely. We work around existing infrastructure, make use of dimensions a standard unit would waste, and configure shelving and access to suit how your team actually works. For businesses in older buildings -- and there are plenty across Geelong's CBD and surrounding suburbs -- this flexibility is often the only practical option. And in many cases, a properly sized custom coolroom works out more cost-effective over its lifetime than a standard unit that costs more to run.

How Robertson's Approaches the Sizing Consultation

We do not quote coolrooms without understanding your operation first. Our process starts with a free on-site assessment, where we look at the available space, discuss your storage requirements, and get a clear picture of how the business runs day to day.

With more than 40 years of experience installing and servicing commercial refrigeration across Geelong, the Bellarine Peninsula, Surf Coast, Colac, and the Golden Plains, we have seen just about every site configuration and operational challenge going. That experience means we can give practical, honest advice about what will actually work for your business.

Once we understand your needs, we design and build to measure, using commercial-grade components and the same standards Robertson's Refrigeration has maintained since 1986.

If you are planning a new coolroom installation or want to check whether your current setup is working as efficiently as it should, get in touch. We are happy to come out, take a look, and give you an honest assessment.
